I was really surprised when I saw the time when I woke up this morning. I woke up a little bit and saw that it was a little after 7:30, I blinked, rolled over and then it was almost 10am. It was kind of shocking for me to sleep in that late. Usually I'm jumping out of bed around 8am.
By the time I got up and showered I was having breakfast close to 11am. As it was that late in the morning and it felt weird to have breakfast as it was I decided to skip the coffee.
I decided to go do a grocery run. I know that Step-Dad grabs some things for me when he does his bi-weekly grocery run. And I do appreciate the thought. However as I eat meat biased lunches I have to buy plastic flatware to eat it with. The flatware comes with a spoon, a knife, and a fork. But with eating just meat I've been using the knife and fork out of the boxes and now my locker at work is full of plastic spoons. I decided that I should probably start cooking some recipes to try to use up the spoons if I can. I got the stuff to make Instant Pot Chili, but I'm going to cook it the slow cooker way as my instant pot is in storage. There was a Digital Coupon on Chuck roast so I bought one to set up a Mississippi Roast in the slow cooker for dinner. I'll cook the chili tomorrow as it took several hours for the roast to cook. I cooked the roast on high for four hours. The recipe online says that's one of the options to do, but it seems to come out tougher when cooked quicker as I've had it before and cooked it for 8 hours on low and it was a lot more tender that way. Mom still seemed to be really impressed with how it turned out.
I made up what I call “Taco Mix” for lunch. That was a pound of hamburger, a small onion, a can of tomatoes with green chilies, some taco seasoning, and a small bag of cheese. I'll admit that was quite a bit to eat all in one sitting, but I'm going to be using up the food containers tomorrow when I cook the chili. If I had the extra containers I could have split it in half having half today and the other half later in the week. When I get around to making cooking videos again I'm pretty sure that I'll make a video of it.
I also picked up some chicken as I didn't seem to have any left and I'm pretty sure I was running low on bratwursts. I didn't vacuum seal any of it today as I used the excuse that Mom was watching videos and I didn't want to interrupt her videos with the droning of the vacuum sealer. I'll pack them tomorrow while she's out.
Mom bought the lot across the street, next to Grandma's place. She had spent the morning trying to mow down the weeds that popped up on the property. I'm not exaggerating when I say that the week stalks were taller that I am. I made a YouTube short asking what the heck these were. The consensus seems to suggest that it was something called “Horse Weed” one of the comments said that it is a pretty common plant around here, but I don't think I've ever seen a weed grow up like that. I was really impressed how the riding lawn mower was able to take it down. When she told me that she was intending on buying the property I wasn't sure how she intended to clear out the rain forest that seemed to have sprang up over there. Mom seemed to be a bit concerned comparing what she was planning on doing with the property and how poorly the garden that she had already had has done this year. I reassured her that even now, there's still a while to go on that, just cutting down the overgrowth it looks CONSIDERABLY better than the raggedness of before.
