I just kind of sat here at the computer counting down the time until I had to go to work. I worked Noon to Nine closing the Customer Service Desk instead of the normal 11a-8pm Supervisor shift that I usually do. I drank an entire pot of coffee, but I'm just sitting here zoned out. I had thought a couple of times that I need to get a plan together for what I'm going to cook on Tuesday for the weekly lunch. But then I zone back out. First half of the day went really smoothly. Not sure if I should write this down. This is being logged at lunch. I worked a 3:5 split so I went to lunch at 3pm and will have to work 4 to 9. Dinner: Spaghetti Squash with ground beef and mushroom onion pasta sauce
Drinks: Kroger energy shot, 2 L Big K Decaffeinated Cola, 900ml Water

    Got the weigh in done this morning. Quite proud of myself that I got all 10 weigh ins and all the daily blogs done so far this year. I have more 2023 weigh ins done by the start of March than I did the entirety of 2022. If I keep it up, by the end of March I'll have more posts on here than I did all of last year.

    I came home from work for lunch. For the last several days I've been wanting to set up the slow cooker with a chuck roast that I bought a couple of weeks ago with a digital coupon. It was in the freezer for most of that time so it's still good. But I keep forgetting to set it up before I head back to work. What I didn't forget to do was pick up a pack of hot dogs on the way out of the store. I keep saying this, but I really need to leave my debit card at home. Energy shots, soda, hot dogs, spaghetti squash/sauce, just didn't need to be bought. Sure it was a heck of a lot more Ketogenic than the stuff I had almost bought, but I still have food at home. Food at home that needs to be eaten.

    After work I was kicking myself for not setting up the pot roast and thinking that I need something for dinner. And sure I have plenty of chicken in the freezer, but I didn't think about that. What did sound really good was some spaghetti. And even if I wasn't trying to follow the Keto diet, the way I make spaghetti really isn't healthy. (I usually eat about half the box of spaghetti in one sitting.) It took a lot of self control to not just say fudge it to the diet and try again some other day. But I settled on picking up what's known as a spaghetti squash. When this squash is baked the inside of the squash goes all stringy and a lot of Keto recipes use it in place of pasta. I say that the taste of the squash isn't bad. But the fibers of the vegetable just don't cook into the same consistency of spaghetti. They're quite crispy (lack of a better term) When I mixed the squash into the sauce it kind of disappeared. It wasn't like eating the spaghetti like I was craving. But the taste of the garlicky tomatoes settled that craving.
